  1. Dice tomatoes and then mix it with onion, vinegar, parsley and minced garlic.

  3. Season the mixed diced tomatoes with basil, oregano, salt and pepper.

  5. Serve the seasoned tomatoes over Melba toast.

Barbecued Halibut with Dill and Fresh Lemon

  1. Combine fresh dill, onion powder, lemon juice, lemon zest, garlic powder, salt and pepper to be used as baste.

  3. Prepare the grill and bring it to a high temperature.

  5. Place the halibut on a barbeque grill with skin side down. Reduce the heat to low. Occasionally baste it.

  7. Cooking time depends on the thickness of halibut. It’s done when you can slice through the thickest part and the flesh is opaque and firm.
