Spinach Chicken Roll

Spinach is one of the permissible vegetables during the second phase of the HCG diet. It provides protein, iron, vitamins, and minerals. Spinach also improves blood glucose control in people with diabetes, lowering the risk of cancer, and improving bone health. Combined with lean chicken meat, they make a combination of fiber and protein-rich meals.nnIngredients:n

  • 100 grams of Chicken breast
  • n

  • 2 cups Spinach
  • n

  • ¼ cup chopped onion
  • n

  • 4 cloves of minced garlic
  • n

  • 3 tablespoon lemon juice
  • n

  • 2 cups chicken broth or water
  • n

  • 1 teaspoon of oregano
  • n

  • 1/8 teaspoon of thyme
  • n

  • ¼ teaspoon onion powder
  • n

  • 1 dash of cayenne pepper
  • n

  • 1 pinch of salt
  • n

  • 1 pinch of black pepper
  • n

nCooking Instructions:n

    n

  • Preheat the oven to 350 °F.
  • n

  • Cover chicken with wax paper & use a mallet to flatten chicken to about ¼ inch thick.
  • n

  • Cook spinach, onion, garlic, lemon juice, and spices in a medium saucepan for 3 -5 minutes. Wait until spinach wilts & spices are fragrant.
  • n

  • Drain liquid and place ¼ of spinach mixture on one end of each chicken breast.
  • n

  • Roll it up and secure it with a toothpick. Place in a baking dish and add chicken broth to the dish.
  • n

  • Bake for 25 minutes or until chicken juices run clear.
  • n

Lean Ground Beef and Chili

  • 100 grams of lean ground beef (Protein-rich)

  • 1 cup of chopped tomatoes
  • n

  • ½ cup water
  • n

  • 2 Tablespoons minced dried onion
  • n

  • 2 minced and crushed garlic cloves
  • n

  • A pinch of garlic powder
  • n

  • A pinch of onion powder
  • n

  • ¼ teaspoon chili powder
  • n

  • A pinch of oregano powder
  • n

  • Salt, pepper, or Cayenne pepper to taste

nCooking Procedure:n

  • Wash and prepare the lean ground beef
  • n

  • Saute the meat in a small frypan along with garlic and onion.
  • n

  • When the meat turns golden brown, add tomatoes and water then stir.
  • n

  • Add spices and simmer slowly until liquid is reduced. Let it cook for 5 minutes to make the meat tender and flavorful.

  • Add a little water as needed to prevent burning.

  • Serve with chopped green onion or tomato garnish and salt and pepper to taste.
