Scotch Eggs for Phase 3

Ingredients:nn1 pound breakfast sausagenn1 egg, beatennn6 hard-boiled eggsnn¼ cup flournn4 tablespoons oilnn1 ½ cup bread crumbsnn nn nnDirections:                                                     nn n

  1. Preheat oven at 350.
  2. n

  3. Divide the breakfast sausage into 6 portions or according to the number of hard-boiled eggs you have and how thick the sausage layer you want.
  4. n

  5. Flatten the sausage portion into patties with a rolling pin and wrap each egg fully.
  6. n

  7. Once the balls are formed, roll them in flour, then in egg wash, then in bread crumbs.
  8. n

  9. Heat oil in a pan over medium heat. Once hot, reduce heat to medium-low and place the balls in oils.
  10. n

  11. Brown all the sides then transfer to a cookie tray.
  12. n

  13. Baked for 20 to 40 minutes or depending on how thick your sausage layer is.
  14. n

  15. Remove from the oven, let it cool a bit, then serve warm.
